Ingredients
2 cups grated lauki (bottle gourd) – peeled and seeds removed
1½ cups full-fat milk
½ cup sugar (adjust to taste)
2 tbsp ghee
½ tsp cardamom powder
2 tbsp grated coconut (optional)
2 tbsp crushed nuts (almonds, cashews, pistachios)
1 tbsp raisins (optional)

Step 1: Prepare Lauki
Wash, peel, and grate the bottle gourd.
Squeeze out excess water using your hands or a muslin cloth.
Step 2: Cook the Lauki
Heat 1 tbsp ghee in a pan. Add grated lauki and sauté for 5–6 minutes on medium flame till raw smell disappears.
Add milk and cook on low flame, stirring occasionally until the milk is fully absorbed and the mixture thickens.
Step 3: Add Sugar and Flavor
Add sugar and mix well. The mixture will loosen up a bit.
Continue cooking until it thickens again and starts leaving the sides of the pan.
Add cardamom powder, grated coconut, and nuts. Mix well.
Step 4: Shape into Laddus
Add 1 tbsp ghee and mix for 1–2 more minutes. Turn off heat.
Let the mixture cool slightly.
Grease your palms and shape into small laddus.
Garnish with a piece of dry fruit or roll in dry coconut if desired.
