Ingredients




  • 3–4 medium karelas (bitter gourds)




  • 1 large onion, sliced




  • 2 tbsp oil




  • ½ tsp mustard seeds




  • ½ tsp fennel seeds (saunf)




  • ½ tsp turmeric powder




  • 1 tsp red chili powder




  • 1 tsp coriander powder




  • ½ tsp amchur (dry mango powder) or 1 tsp lemon juice




  • Salt to taste




  • Optional: ½ tsp sugar (to balance bitterness)

Step 1: Prep the Karela




  1. Wash karelas well. Slice thin (with or without peeling skin as per preference).




  2. Sprinkle with 1 tsp salt and let sit for 20–30 minutes to draw out bitterness.




  3. Squeeze out excess water and lightly rinse.




Step 2: Cook the Sabji




  1. Heat oil in a pan. Add mustard and fennel seeds. Let them splutter.




  2. Add sliced onions. Sauté until golden brown.




  3. Add karela slices. Cook on medium flame for 8–10 minutes, stirring occasionally.




  4. Add turmeric, chili, coriander powder, salt, and sugar (if using). Mix well.




  5. Cover and cook on low flame until karela is tender and lightly crisped.




  6. Finish with amchur powder or lemon juice. Mix and cook for another 2 minutes.
