???? Ingredients
4–5 large potatoes (preferably Russet or starchy variety)
Cold water for soaking
1–2 tbsp cornstarch (optional, for extra crispiness)
Salt, to taste
Oil for deep frying
???? Instructions
Step 1: Prep the Potatoes
Wash, peel, and cut the potatoes into even-sized thin sticks.
Soak the cut fries in cold water for at least 30 minutes to remove excess starch (makes them crispier).
After soaking, drain and pat them completely dry using a kitchen towel.
Step 2: First Fry (Blanching)
Heat oil in a deep pan to 130–140°C (265–285°F).
Fry the potato sticks in small batches for 4–5 minutes, just until soft and pale (they should not brown).
Remove and let them rest on a tray lined with paper towels. Cool completely.
Step 3: Second Fry (Crisping)
Heat oil again, now to 180–190°C (355–375°F).
Fry the cooled potatoes in batches until golden brown and crispy.
Remove and immediately season with salt.
✅ Tips for Extra Crispiness
After drying, toss the fries in a bit of cornstarch before the first fry.
Do not overcrowd the pan during frying.
Double-frying is the secret to that perfect texture.
You can freeze the blanched fries for later and do the final fry directly from frozen!
