1 tsp ginger-garlic paste
1–2 green chilies, chopped (adjust to taste)
½ tsp cumin seeds
½ tsp turmeric powder
½ tsp red chili powder
1 tsp coriander powder
Salt to taste
1–2 tbsp oil or ghee
Optional: ½ tsp garam masala or a squeeze of lemon juice

Step 1: Prepare the Potatoes
Heat oil in a pan. Add cumin seeds and let them splutter.
Add chopped onions and green chilies. Sauté until onions turn golden.
Add ginger-garlic paste and cook for a minute until the raw smell disappears.
Add diced potatoes, turmeric, chili, coriander powder, and salt. Mix well.
Cover and cook on low-medium heat for 8–10 minutes or until potatoes are nearly tender.
Step 2: Add the Spinach
Add the chopped spinach. It will release water—mix well.
